This is a VERY quick recipe and is very low in calories

I made this after my long shift in the gym at about 9:30pm last Thursday. By 10pm I had eaten it!

There is no messing about with this recipe – I was tired, hungry and desperate for some actual food, rather than any microwave meal or cardboard pizza.

Ingredients:

120g pork loin steak (seasoned with garlic, rosemary, salt and pepper)

100g Moroccan couscous (ready-made)

62g yellow peppers

80g tomatoes

2 sprays of “1cal spray”

Method:

  1. Season your pork with garlic, rosemary, salt and pepper
  2. Heat a frying pan with 2 sprays of “1cal spray”. Make sure it’s HOT!
  3. Add your pork, peppers and tomatoes
  4. Toss the veg and flip the pork after about 3-4minutes. Keep moving the veggies about so they don’t catch in the pan
  5. Cook until pork is done (another 3-4minutes)
  6. Tip all of the above into a bowl with your couscous.

As you can see in the picture there is a good balance of protein, carbohydrates and fats as well as having veggies to help fill you up – feel free to add more veggies if you have more time/inclination to use a chopping board past your bed time.
