Amazing Sweet Potato Chocolate Brownies (makes 9) (15 minutes + cooking time)

A really quick and easy recipe, once the potato is cooked just add everything to a blender!
Ingredients:
– 1 medium sweet potato – ½ banana – 3 eggs at room temp – 3 tablespoons coconut oil – 3 tablespoons coconut flour – 1 tablespoon Stevia or agave nectar – 3 tablespoons unsweetened cocoa powder – 1 tablespoon almond butter (optional) – 1 teaspoon vanilla extract – 2 scoops of whey protein powder (preferably chocolate/white chocolate or vanilla) – ¼ teaspoon salt – ¼ teaspoon powder – ¼ teaspoon cinnamon
Recipe:
- Pre-heat the oven to 180°C
- Put the sweet potato in a microwaveable container and microwave for 10 minutes
- Whisk the eggs
- When the sweet potato is cooked through, cut in half and remove the skin
- Add the sweet potato along with all the other ingredients to a blender and blend well
- Grease a baking tray with coconut oil and pour the mixture into it
- Bake for 15-20 minutes until you can put a fork into it and it comes out clean
- Cut 9 pieces and store in the fridge or freezer as it contains eggs!
A little bit naughty…..protein rocky roads!

Omit the marshmallows for a healthier treat!
Ingredients:
-50g coconut oil – 1 scoop of whey protein powder (pref chocolate) – 2 tbsps unsweetened cocoa powder – 1 tbsp agave nectar – handful of mini marshmallows – 25g of cranberries -25g of chopped almonds
Recipe:
- Melt the coconut oil until just melted
- Mix in the cocoa powder and the protein powder until it resembles melted chocolate
- Add the agave nectar and mix in the marshmallows, cranberries and almonds
- Line a baking tray with 2 layers of cling film and pour the mixture into it
- Chill in the freezer for at least 1 hour to harden
- Cut into pieces and store in the fridge
