A Good Day’s Diet
If you are anything like me you would love to have a live-in-chef to make the healthiest, tastiest meals you could think of. Personally I can’t afford this luxury and have to come up with meal ideas that will be quick and easy to replicate. Below are some recipes that I have tried and that work on the new Better Body Shop Diet. I find the hardest thing to do, when trying to eat healthily, is make the decision on what to eat. So here you go, an example of a good days eating.
Breakfast: Vegetable Fritatta
Ingredients:
3 eggs
1/2 green/red pepper
1/4 large onion
3 asparagus spears
1 small avocado
1 table spoon of olive oil
Salt and pepper
Instructions:
Whisk the eggs and season with salt and pepper.
Add the pepper, onion and asparagus spears to frying pan with olive oil.
Pour eggs into the frying pan.
Finish the cooking under the grill to colour the Fritatta on the top.
Slice and dice the avocado to have on the side.
*Add Tabasco/fresh green chillies to spice things up if you feel like it.
Eat it all up.

Lunch: Chicken Salad
Ingredients:
1/2 cos lettuce
1/2 green/red pepper
Handful of olives
5 cherry tomatoes
1 chicken breast (if uncooked you will need 1 tb spoon of olive oil and a squeeze of lemon juice) Salt and pepper
Instructions:
If your chicken breast is uncooked rub it in olive oil, lemon juice and salt and pepper to add flavour and grill until cooked through.
Slice chicken in to fork sized strips.
Chop all salad to your liking (I like mine about the same size as the chicken so you can stab it all with the fork).
Season the salad to taste, plenty of pepper.
*Add olive oil/vinegar/lemon juice as a dressing.
Put all ingredients in a bowl and eat.
Dinner: Roast pork shoulder and veg
Ingredients:
2 pork shoulder steaks
1/2 red/green pepper
1 whole red onion (medium sized)
1/3 of a large butternut squash
1 sweet potato
4 garlic cloves
2 tb spoon Olive oil
Salt and pepper
Instructions:
Chop all veg into cubes about 1 inch square.
Add all ingredients above into a large roasting dish.
Put in the oven until veg is cooked to your liking. I would recommend 185degrees for around 40-50 minutes.
*Add chopped chillies/Tabasco for extra heat.
Serve on a large plate.
These recipes have all been tried and tested and meet the new Better Body Shop guidelines. Cooking times may vary due to different oven temperatures/fan assisted ovens etc. keep an eye on the food and make sure it is cooked through, but making sure it is not overcooked.
*Remember to take your fish oils everyday to keep your Omega-3 levels up. These are available from Shelley at Reception.
